What is SUCCESS?


Success... What does it mean? According to the dictionary, the word means: the accomplishment of an aim or purpose. So you might say that you have had a successful day or you succeeding in washing of of the laundry. But what about when people talk about success in the context of somebody's whole life.

"Have they had a successful life?", "She is very successful". When you, I mean you reading this right now, when you read those what do you think of? I bet it's about how much money she has earned or how high in the ranks of her career she is, how famous she is? Well, can we really judge other people's success? If you think about it, each person's success is based the goals that they have set, and quite honestly we have no idea what goals people have set. I may class myself as successful because I have mastered the art of bread-making. Not the fact that I have earned 5 million dollars from the sales of my best-selling bread book.

Think about it. What do you want your life to truly be like? Is your main goal to be happy and what ever else happens is just a add-on? Then you are successful every time that you are happy. It sounds weird to think of yourself successful for having a smile on your face but that is what society has done to us. And no this is not a rant about society! But, traditions and what other people think are the things that influence us. That is society - the people around us.

Perhaps when people are asked what theirs aims are in life, they may say successful. Read that definition again. If success is the accomplishment of an aim, how can your aim be success? It doesn't make sense, does it? If you are feeling happy right now, then in my mind you are quite succesful.

What I want you to take from this is another perspective and re-evaluate your aims. Personally, I would like to help other people in any way that I can. My main aim being to help their diet and well-being and living a full life with family around them and happiness in abundance.

Addictive Sweet-Potato Burritos

The title does not disappoint here! I cannot even comprehend words as to how to describe how delicious these taste, it is love at first bite. Ok, so they are completely vegetarian and vegan depending on what you add and even my sister who is extremely picky and hates Mexican food, admitted that she loves them. Score!



The look of them when you cut into the crispy tortilla isn't best pleasing to the eye but as soon as you taste them, that hindrance washes away and uhh just thinking about them is making my mouth water... I'm officially having these for dinner...


       Ingredients: (serves 4)
  • 1 large sweet potato cooked and mashed (265g)
  • 500g red kidney beans (1 cup-ish)
  • 160ml water
  • 1/2 red onion
  • 1 garlic clove


       Instructions:

  • Preheat the oven to 180 degrees C.
  • Heat oil in a medium sized pan and sauté the onion and garlic until soft. Mash the beans lightly into the mixture. Gradually stir in the water and heat until warm for 2-3 minutes. Remove from heat and stir in the soy sauce, chilli powder, mustard, cumin and cayenne pepper. Warm the tortillas for around 30 seconds in the microwave.
  • Divide the mashed sweet potato and bean mixture between tortillas and top with cheese. Fold the tortillas burrito-style and place on a baking sheet.
  • Bake in the oven for around 12 minutes.

Serving Suggestion:
- Serve with my bueno corn salad for a real mexican delight!
- Add salsa, sour cream and tomatoes.

Bueno Corn Salad

This salad works a treat in my house, it is tasty, has great texture and smells divine. It is pretty simple and you can also add and swap different ingredients to make it more suited to yourselves...


         Ingredients:
         Serves one 
  • 1 cup/tin of sweet corn (Even for 2 or 3 people I would still only use 1 tin)
  • 1/2 an avocado
  • 1/4-1/2 a red onion
  • juice of 1/2 a lime
  • 1 tbsp olive oil (I used extra virgin)



     Instructions:

1. Heat the sweet corn in a pan until cooked.

2. Simply add all together and voilà! In terms of chopping up the ingredients, just chop them up small so that you fit multiple pieces on your fork. It may sound silly put sometimes you chop something up too large and its just annoying when they all fall of the fork! 


Optional extras...
- Baby tomatoes
- Jalapeños
- Spring onions
- Coriander

I would recommend serving this with any Mexican dish such as burritos, tacos or... anything really.

What is Explore Nourish Inspire?

Welcome to my blog! I hope for this to be an outlet for my discoveries in life and to share it with the world around me. I want this blog to be fun and inspiring and also where you can learn new things about stuff! I know it's vague but so is my idea of how this will turn out haha. 

Posting often is what I would like to do and whether that will happen is up to me I guess. I am in the midst of exams right now and they will finish in a month! I am counting down for my last exam but I also know that at that point I can't do anything about it any more. Scary! So basically after my exams I will have nothing to do and can therefore put my thoughts into this blog. Yay.


Follow me on my journey and we can inspire each other. I know it's cheesy but it works when your feeling low and even feeling on top of the world.


Just a bit about me: I am 18 but age is just a number really. My passions are food, fitness, travelling, art and my family. Thinking about each one of those makes my heart skip a beat and they are each so important to me as I know many passions are to you.
